Blueberry and Jam's Favorite Recipes - Mama's Blueberry Muffins



Blueberry and Jam just love Mama's Blueberry Muffins! Here is how Mama makes these delicious treats.


Ingredients:

In large bowl stir together

3 cups flour

4 teaspoons baking powder

1 teaspoon salt

1/2 cups white sugar


In smaller bowl combine.

2 eggs

2 cups of whole milk or Lactaid

2/3 cup of vegetable oil or canola oil


Topping:

1/3 cups all purpose flour

1/2 cup firmly packed brown sugar

1/4 cup unsalted butter - melted.

Mix in a small bowl until crumbly. Refrigerate.


Directions and Tips:

Heat oven to 350 degrees.

Muffin tin: Mama uses tins with 6 spots to bake larger muffins. You can use any size tin you like. Line with muffin cups.


  • Stir together flour, baking powder, salt, and sugar. Make a dip or a well in the middle of the mixture.

  • Next beat the eggs in a bowl and whisk in the milk and the oil.

  • Pour into the flour mixture. It will be lumpy.

  • Add in 1-2 cups of fresh Maine blueberries. Mama uses two cups.

  • Spoon the batter into the muffin cups.

  • Take topping out of the refrigerator and sprinkle mixture on top of each muffin.


Bake for around 20-30 minutes, depending on your own. A toothpick inserted into the center of the muffin should come clean when they are done.
